Ingredients

  • 1 lb. bulk sausage
  • 3 c. mashed potatoes
  • 1 large can sauerkraut
  • 1 c. shredded Cheddar cheese
  • dash of butter
  • dash of pepper

Instructions

  1. Make up 3 cups mashed potatoes and set aside.
  2. Fry the sausage; drain well.
  3. Wash the sauerkraut and let it drain.
  4. In a large deep dish pie pan, pat half of the mashed potatoes about 1/4-inch thick on the bottom and sides.
  5. Layer half of the sauerkraut, sausage, and cheese over the mashed potatoes.
  6. Repeat with the remaining sauerkraut, sausage, and cheese to make a second layer.
  7. Using the rest of the mashed potatoes, pat a crust on top and pinch the ends together.
  8. Rub a dash of butter on the top and sprinkle lightly with pepper.
  9. Bake at 350°F for 8 to 10 minutes or until the top turns a golden brown.
