Ingredients

  • 1/2 lb. mild sausage
  • 1 small onion
  • 1 stalk celery with leaves
  • 1/3 to 1/2 cup margarine or butter
  • 1/2 teaspoon poultry seasoning or sage
  • 1/2 teaspoon salt
  • black pepper to taste
  • 5 cups bread crumbs
  • water
  • milk
  • giblet broth (optional)

Instructions

  1. Crumble the sausage meat and brown it in a skillet. Remove the sausage and set aside.
  2. Saute the onion and celery in part of the fat and butter or margarine until tender.
  3. Combine the seasonings and bread crumbs in a large bowl.
  4. Toss the bread crumbs with the onion mixture and cooked sausage.
  5. Add water, milk, or giblet broth as needed to moisten the crumbs for a desired consistency.
