Ingredients

  • 1 lb. ground pork sausage
  • 1 c. chopped onion
  • 1 (28 oz.) can tomatoes, undrained
  • 1 (4 oz.) chopped green chilies, undrained
  • 1 c. frozen kernel corn
  • 1 tsp. chili powder
  • 1 box Jiffy cornbread mix

Instructions

  1. Cook the sausage and chopped onion in a large skillet over medium heat until the meat is browned, stirring to crumble.
  2. Drain the grease from the skillet.
  3. Add the undrained tomatoes, chopped green chilies, frozen corn, and chili powder to the skillet.
  4. Simmer the mixture for 20 minutes, stirring occasionally.
  5. Prepare the Jiffy cornbread mix according to package instructions and spread over the sausage mixture in a casserole dish.
  6. Bake until the cornbread is golden brown and cooked through, about 20-25 minutes.
