A flavorful and hearty sausage and zucchini stir-fry with tomatoes and spices, perfect for quick weeknight dinners or casual gatherings, served over rice with fresh greens.

Ingredients

  • 1 lb Italian sweet sausage, cooked and sliced
  • 1/2 cup sliced onions
  • 2 cups chopped and peeled tomatoes
  • 1/4 teaspoon hot red pepper sauce
  • 4 cups coarsely grated uncooked zucchini
  • 1 tablespoon lemon juice
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 cup freshly grated Parmesan cheese (optional)

Instructions

  1. After Italian sausage has been browned well and sliced, add onions to sausage drippings and brown lightly.
  2. If there is too much grease, pour some off.
  3. Add sausage slices, tomatoes, zucchini, lemon juice, oregano, salt, and hot red pepper sauce.
  4. Stir-fry for 5 minutes only.
  5. Serve plain or with freshly grated Parmesan cheese sprinkled on top.
  6. Typically served over white rice with a green salad and bread for a complete meal.
