Ingredients

  • 1 lb. sausage
  • 1 (16 oz.) can kidney beans
  • 1 1/2 cups canned tomatoes
  • 2 cups water
  • 1 small onion, chopped
  • 1 bay leaf
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/8 teaspoon pepper
  • 1/2 cup diced potatoes
  • 1/4 cup chopped green pepper

Instructions

  1. Brown, drain, and rinse the sausage.
  2. In a large kettle, combine kidney beans, canned tomatoes, water, chopped onion, bay leaf, garlic powder, thyme, and pepper.
  3. Add the cooked sausage to the kettle.
  4. Simmer, covered, for 1 hour.
  5. Add diced potatoes and chopped green pepper.
  6. Cook, covered, for an additional 15 minutes or until potatoes are tender.
  7. Remove the bay leaf and serve.
