Ingredients

  • 1 lb. bulk pork sausage
  • 1 (16 oz.) can kidney beans (undrained)
  • 1 (28 oz.) can tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1 cup diced potato
  • 1 medium green pepper
  • salt and pepper to taste
  • 2 cups water
  • 2 Tbsp. parsley

Instructions

  1. In a large boiler or Dutch oven, brown the sausage.
  2. Crumble the sausage well and add the chopped onion and minced garlic.
  3. Drain the sausage mixture well.
  4. Stir in the kidney beans, tomatoes, water, thyme, oregano, salt, and pepper.
  5. Cover and simmer for 2 hours, stirring occasionally.
  6. Add the chopped green pepper and diced potatoes.
  7. Simmer for an additional 20 minutes until vegetables are tender.
