Ingredients

  • 1 lb. sausage
  • 1 large onion, chopped
  • 2 eggs, lightly beaten
  • 1 1/2 cups cornmeal
  • 1 can cream-style corn
  • 3/4 cup milk
  • 1/4 cup oil
  • 2 cups grated cheese

Instructions

  1. Preheat oven to 425°F.
  2. Brown sausage with chopped onion and drain excess fat.
  3. Combine cornmeal, eggs, cream-style corn, milk, and oil in a mixing bowl.
  4. Pour half of the batter into a greased iron skillet.
  5. Sprinkle the cooked sausage mixture and grated cheese over the batter.
  6. Pour the remaining batter on top.
  7. Bake for 30 to 40 minutes until golden and cooked through.
