Ingredients

  • 1 1/2 lb. seasoned sausage meat (Bob Evans)
  • 1/4 cup margarine
  • 4 Tbsp. curry powder
  • 1 medium onion, cut into squares
  • 1 large green pepper, cut into squares
  • 2 large tomatoes, cut into wedges

Instructions

  1. Saute the seasoned sausage meat in a skillet and drain if desired.
  2. Add margarine and curry powder to the skillet.
  3. Add the onions and green peppers to the skillet.
  4. Cook for about 5 minutes until vegetables are tender.
  5. Add the tomato wedges and cook just until heated through.
  6. Serve hot, ideally over rice.
