Ingredients

  • 1 lb. pan sausage
  • 1 chopped onion
  • 1 chopped green pepper
  • 2 bouillon cubes
  • 1 to 1 1/2 qt. water
  • 1 bay leaf
  • 1/2 tsp. thyme
  • garlic salt to taste
  • salt to taste
  • pepper to taste
  • potatoes, cubed
  • carrots, sliced
  • celery, chopped
  • 1 pt. chopped tomatoes
  • 1 can tomato sauce

Instructions

  1. Brown the sausage in a large pot until fully cooked.
  2. Add chopped onion, chopped green pepper, potatoes, carrots, and chopped celery to the pot.
  3. Add the bouillon cubes, water, bay leaf, thyme, garlic salt, salt, and pepper.
  4. Simmer until the vegetables are tender, about 30 minutes.
  5. Stir in the chopped tomatoes and tomato sauce, and cook for an additional 5 minutes.
  6. Add the kidney beans and simmer for 5 more minutes.
  7. Serve hot and enjoy!
