Sausage stuffed tomatoes offer a flavorful combination of seasoned sausage, fresh vegetables, and melted cheese, perfect for a hearty appetizer or main course for casual family meals.

Ingredients

  • 4 large firm tomatoes
  • 1/2 cup soft bread crumbs
  • 3 tablespoons finely chopped celery
  • 3 tablespoons finely chopped green pepper
  • 1/2 pound mild bulk pork sausage, cooked, crumbled and drained
  • salt and pepper
  • 1/2 cup shredded Cheddar cheese
  • fresh parsley sprigs

Instructions

  1. Cut tops from tomatoes and scoop out pulp.
  2. Chop the pulp and combine it with bread crumbs, chopped celery, chopped green peppers, and cooked sausage.
  3. Mix well until all ingredients are evenly incorporated.
  4. Sprinkle the inside of each tomato shell with salt and pepper.
  5. Fill the tomato shells with the sausage mixture.
  6. Top with shredded Cheddar cheese.
  7. Bake until the cheese is melted and bubbly, about 15 minutes at 375°F (optional step).
  8. Garnish with fresh parsley sprigs before serving.
