Ingredients

  • 1 medium onion, sliced
  • 3 Tbsp. cooking oil
  • 3 Tbsp. all-purpose flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 4 pork chops (1 1/2 inches thick)
  • 2 large potatoes, peeled and sliced
  • 1 large carrot, sliced
  • 1 (16 oz.) can tomatoes with liquid, cut up
  • 1 c. frozen peas

Instructions

  1. In a large skillet, sauté onion in oil until tender.
  2. Remove onion with a slotted spoon and set aside.
  3. Reserve drippings in the pan. Combine flour, salt, and pepper; coat the pork chops with the mixture.
  4. Brown the coated pork chops on both sides in the drippings.
  5. Add potatoes, carrot, tomatoes, and sautéed onion to the skillet.
  6. Bring the mixture to a boil, then reduce heat to simmer.
  7. Cover and simmer for 1 1/2 hours, adding the peas during the last 10 minutes.
