  • 1/2 lb. Italian sausage meat
  • 1 Tbsp. grated Parmesan cheese
  • 6 Tbsp. fresh bread crumbs

Instructions

  1. Trim off the ends of the zucchini and scoop out the center of each, leaving a wall and base of about 1/2 inch or less.
  2. Reserve the scooped out pulp and chop enough pulp to make 3/4 cup.
  3. Preheat the oven to 375°F (190°C).
  4. In a skillet, melt 3 to 4 tablespoons of butter over medium heat.
  5. Add the finely chopped onion and cook until translucent, about 5 minutes.
  6. Add the minced garlic and dried thyme, cooking for another minute.
  7. Remove the skillet from heat and stir in the chopped pulp, cooked Italian sausage, Parmesan cheese, and bread crumbs.
  8. Season with salt and freshly ground pepper to taste.
  9. Stuff the zucchini shells with the sausage mixture and place in a baking dish.
  10. Bake uncovered for 25-30 minutes until zucchini is tender and topping is golden.
