Ingredients

  • 1 medium eggplant
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • flour for coating
  • 3 Tbsp. salad cooking oil

Instructions

  1. Pare the eggplant and cut into 1/4-inch thick slices.
  2. Sprinkle the slices with salt and pepper.
  3. Dredge both sides of the slices with flour.
  4. Saute slowly in 3 tablespoons of cooking oil, turning to brown each side.
