Ingredients

  • 1 Tbsp. olive oil
  • 2 medium onions, chopped
  • 1 large eggplant, peeled and cubed
  • 1 lb. zucchini, sliced
  • 2 to 4 cloves garlic
  • 1 bell pepper, sliced
  • 3 firm ripe tomatoes
  • 2 tsp. salt
  • 1/2 tsp. basil
  • 1/2 tsp. thyme
  • 1/4 tsp. red pepper

Instructions

  1. In a microwave-safe, covered casserole, sauté onions and garlic in olive oil on High for 4 minutes.
  2. Add eggplant, bell pepper, and zucchini to the casserole.
  3. Cover and microwave on High for 7 minutes, stirring once during cooking.
  4. Add tomatoes, salt, basil, thyme, and red pepper to the vegetables.
  5. Mix lightly to combine the ingredients.
  6. Cover with a towel and microwave for an additional 5 minutes or until vegetables are tender.
  7. Serve over rice.
