Supreme Zucchini Dish

A flavorful zucchini bake layered with tomatoes, cheese, and bread crumbs, ideal for a comforting vegetarian main or side dish with rich, savory flavors.

Ingredients

  • 2 small zucchinis
  • 1 medium onion
  • 1 tsp. green pepper, chopped
  • 1 pint tomatoes
  • 3 Tbsp. sugar
  • salt
  • oregano
  • 2 heaping Tbsp. flour
  • bread crumbs
  • grated sharp cheese
  • butter

Instructions

  1. Peel and dice the zucchini.
  2. Boil the zucchini in salt water for 5 minutes, then drain.
  3. Saute chopped onion and green pepper until tender.
  4. In the meantime, combine and mix together tomatoes, sugar, salt, oregano, and flour.
  5. Add this mixture to the onion and green pepper, and cook until thickened.
  6. Grease a casserole dish.
  7. Layer the cooked zucchini in the casserole.
  8. Pour the tomato mixture over the zucchini.
  9. Sprinkle grated sharp cheese over the tomatoes.
  10. Top with bread crumbs.
  11. Dot small pieces of butter on top of the bread crumbs.
  12. Bake in a 350°F oven for 45 minutes, covering with tinfoil for the first 20-25 minutes, then uncover for the remaining time.
