Ingredients

  • 1 medium onion
  • 1 medium zucchini
  • 1 green pepper
  • 1 tomato
  • 2 ears cooked corn or 1/2 package frozen corn
  • black pepper to taste
  • 1/2 cup grated Cheddar or Jack cheese
  • 3 tablespoons olive oil
  • 1 clove garlic
  • 2 tablespoons flour
  • 2 tablespoons chili powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut all vegetables into large dice and cut corn from cobs.
  3. In a small bowl, combine olive oil, minced garlic, chili powder, flour, salt, and black pepper to make a spice mixture.
  4. Toss the diced vegetables and corn with the spice mixture until evenly coated.
  5. Transfer the mixture to a baking dish and spread evenly.
  6. Sprinkle grated cheese over the top.
  7. Bake in the preheated oven for about 25-30 minutes, until vegetables are tender and cheese is melted and golden.
