Ingredients

  • 1 C green pepper strips, 1/4 x 2 inch
  • 1 C sweet red pepper strips, 1/4 x 2 inch
  • 1 C sliced fresh mushrooms
  • 2 Tbsp olive oil
  • 1 clove garlic, pressed or minced
  • 1 Tbsp chopped pimento, optional
  • 1/4 tsp salt
  • Dash pepper

Instructions

  1. Combine green and red pepper strips and sliced mushrooms in a 2-quart casserole.
  2. Add olive oil, garlic, pimento (if using), salt, and pepper. Cover and cook until vegetables are tender.
