Ingredients

  • 3 lb. chuck roast
  • 1/4 cup vegetable oil
  • 2 cloves garlic
  • 1 cup diced onion
  • 1 (20 oz.) can crushed pineapple
  • 1 (16 oz.) can chopped tomatoes
  • 1 (6 oz.) can tomato paste
  • 1/2 cup packed brown sugar
  • 1 tablespoon dry mustard
  • 1 teaspoon dried red peppers
  • 1/2 teaspoon salt

Instructions

  1. In a large skillet, brown the chuck roast on both sides in hot vegetable oil over medium-high heat.
  2. Remove the roast to a 3-quart shallow casserole dish.
  3. Add minced garlic and diced onion to the skillet; reduce heat to medium-low and sauté until the onion is soft.
  4. Add undrained crushed pineapple, chopped tomatoes, tomato paste, brown sugar, dry mustard, dried red peppers, and salt to the skillet.
  5. Stir to blend all ingredients and simmer uncovered for 15 minutes.
  6. Pour the sauce over the roast in the casserole dish.
  7. Cover with foil and bake in a preheated 350°F (175°C) oven for 1 hour.
  8. Remove the foil and bake for an additional 30 minutes or until the beef is tender.
