Texas-Style Chuck Roast

- In a large skillet, brown the chuck roast on both sides in hot vegetable oil over medium-high heat.
- Remove the roast to a 3-quart shallow casserole dish.
- Add minced garlic and diced onion to the skillet; reduce heat to medium-low and sauté until the onion is soft.
- Add undrained crushed pineapple, chopped tomatoes, tomato paste, brown sugar, dry mustard, dried red peppers, and salt to the skillet.
- Stir to blend all ingredients and simmer uncovered for 15 minutes.
- Pour the sauce over the roast in the casserole dish.
- Cover with foil and bake in a preheated 350°F (175°C) oven for 1 hour.
- Remove the foil and bake for an additional 30 minutes or until the beef is tender.
