Ingredients

  • 1/4 cup butter or margarine
  • 4 cups diced cooked roast beef
  • 6 cups diced peeled potatoes
  • 3/4 cup chopped onion
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch

Instructions

  1. In a large pot or electric skillet, melt butter.
  2. Add diced cooked roast beef, diced potatoes, chopped onion, beef broth, salt, and black pepper.
  3. Cover and simmer until potatoes are tender, approximately 30 minutes.
  4. Mix a small amount of cold water with cornstarch and stir into the hash to thicken slightly.
