Ingredients

  • 1 1/2 cups dried lima beans
  • 1 small onion, sliced
  • 1/2 teaspoon salt
  • 1 cup diced celery
  • 2 tablespoons chopped green pepper
  • 1 cup condensed tomato soup
  • 1/2 cup water
  • 1/4 cup buttered bread crumbs
  • 1/2 pound bacon, cut up, fried and drained

Instructions

  1. Soak the lima beans in cold water overnight.
  2. Drain the beans and cover with boiling water.
  3. Add sliced onion and cook slowly until tender. Drain.
  4. Add salt, diced celery, chopped green pepper, tomato soup, melted butter, pepper, and salt to taste.
  5. Pour the mixture into a greased baking dish.
  6. Sprinkle the top with bread crumbs.
  7. Bake in a hot oven at 400°F for 30 minutes.
  8. Optionally, add cooked and drained bacon on top or mixed in before baking.
