Ingredients

  • 3 large potatoes, peeled and cubed
  • 1/2 carrot, finely diced
  • 1/4 medium onion, diced
  • 1/2 stalk celery, finely diced
  • 2 Tbsp. butter
  • milk
  • salt

Instructions

  1. Cover all ingredients in a saucepan with barely enough water to cover the top of the vegetables.
  2. Cook for 15 minutes until tender.
  3. Do not add more water, but watch to prevent scorching.
  4. When tender, mash with a fork only.
  5. Add milk to achieve your desired consistency.
