Ingredients

  • 2 lb. jumbo shrimp, peeled, tails on
  • 1/4 lb. butter or margarine, softened
  • 1 Tbsp. scallions, chopped
  • 1 tsp. minced garlic
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. minced fresh parsley

Instructions

  1. Slit peeled shrimp down the center to butterfly, leaving tails on. Remove veins.
  2. Place butter in a bowl; mix in scallions, minced garlic, salt, pepper, and minced parsley to blend completely.
  3. Put shrimp on a shallow broiling pan.
  4. Place a dab of the butter mixture on each shrimp.
  5. Broil about 5 minutes until cooked through.
