Ingredients

  • 1 cup eggplant
  • 1 cup cracker crumbs
  • 1 medium onion, chopped
  • 1/2 cup cornbread crumbs
  • 1/2 cup sharp cheese, grated
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/2 stick margarine
  • 1/2 tablespoon sugar
  • 1/2 cup milk

Instructions

  1. Peel and cube the eggplant.
  2. Boil the eggplant in salted water until barely tender.
  3. Drain the eggplant.
  4. Mix the cooked eggplant with all ingredients except the cheese.
  5. Put the mixture into a greased baking dish.
  6. Top with grated sharp cheese.
  7. Bake at 350°F for 30 minutes.
