Ingredients

  • 20 oz. can crushed pineapple
  • 6 slices white bread
  • 1/4 cup margarine
  • 1 tablespoon margarine
  • 3 eggs
  • 3/4 cup sugar

Instructions

  1. Drain the crushed pineapple, reserving 1/3 cup of juice.
  2. Trim crusts from the bread and cut into 1-inch cubes.
  3. Combine the pineapple, reserved juice, bread cubes, and margarine cut into 1/2-inch pieces in a bowl.
  4. Add beaten eggs, sugar, and cinnamon to the mixture and stir well.
  5. Pour the mixture into a lightly greased casserole dish.
  6. Cover and microwave on high for 8 to 10 minutes, stirring at 3-minute intervals, until set.
  7. Let stand for a few minutes before serving.
