Scallops A La Nice

Ingredients

  • 1 lb. scallops
  • 1 tomato, diced
  • 1/2 lb. angel hair pasta
  • 1 clove minced garlic
  • 4 oz. olive oil
  • 1 oz. lemon juice
  • 1 oz. dry white wine
  • 2 oz. butter
  • 3 tsp. Tabasco sauce
  • 1 Tbsp. chopped parsley
  • 1 Tbsp. chopped oregano
  • 1 Tbsp. chopped basil

Instructions

  1. Sauté minced garlic in olive oil until fragrant.
  2. Add scallops and sauté until opaque, then drain the olive oil.
  3. Deglaze the pan with white wine and lemon juice.
  4. Add diced tomatoes, Tabasco sauce, butter, chopped herbs, and cook until heated through.
  5. Serve the scallops and sauce over cooked angel hair pasta.
