Ingredients

  • 2 lb. fresh scallops, cooked
  • 3/4 cup toasted dry bread crumbs
  • 1/4 cup chopped green onions and tops
  • 1/4 cup chopped parsley
  • 3/4 teaspoon crushed tarragon
  • 1/4 teaspoon crushed garlic
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • dash of pepper
  • 1/2 cup butter, melted
  • 1/4 cup sherry

Instructions

  1. Combine toasted dry bread crumbs, chopped green onions, chopped parsley, crushed tarragon, crushed garlic, nutmeg, salt, and pepper in a bowl.
  2. Add melted butter and sherry to the breadcrumb mixture; mix thoroughly.
  3. Toss the cooked scallops lightly with the breadcrumb mixture until coated.
  4. Place the coated scallops in a well-greased, shallow, 1-quart casserole dish.
  5. Bake in a 400°F oven for 15 to 20 minutes, until lightly browned.
