Scottish scones are flaky, buttery treats with a hint of sweetness, perfect for breakfast or tea time, enjoyed plain or with marmalade and curd.

Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 2 beaten eggs
  • as much milk as needed to make 1.5 cups
  • as many currants or raisins or dried cranberries as desired
  • 1/2 cup sugar
  • 1/2 cup butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend dry ingredients using a pastry cutter.
  3. Add beaten eggs and enough milk to make 1 1/2 cups of mixture.
  4. Handle the dough as little as possible and drop by large spoonfuls onto greased cookie sheets.
  5. Bake for 20 minutes or until light brown.
  6. Serve plain with marmalade or lemon curd.
