Ingredients

  • 1 1/2 lb ground beef
  • 1 tsp bacon fat
  • 1/4 cup flour
  • 1 1/2 onions, chopped
  • 1 1/2 tsp powdered cumin seed
  • 1 1/2 oz chili powder
  • 1 tsp oregano
  • 1 1/2 tsp salt
  • bowl of Fritos or tortillas

Instructions

  1. Saute the ground beef in just enough bacon fat to cover the bottom of the skillet until browned.
  2. Add the remaining bacon fat and flour to the skillet and cook, stirring constantly.
  3. Gradually add heated consommé, stirring to combine.
  4. Simmer the mixture for 30 minutes, stirring frequently.
  5. Increase heat and stir continuously until the mixture thickens.
  6. Transfer the mixture to the top of a double boiler, add cheese in small chunks, and stir until melted.
  7. Serve in a chafing dish with Fritos or tortillas.
