Scottish Slumpie
Ingredients
- 1 1/2 lbs ground beef
- 1 tablespoon canola oil ⓘ
- 3 teaspoons minced garlic ⓘ
- 1/2 cup sliced mushrooms ⓘ
- 2 cups beef stock ⓘ
- 2 cups Guinness stout ⓘ
- 3/4 lb frozen spinach ⓘ
- 1 tablespoon ketchup ⓘ
- 1 1/2 teaspoons sage ⓘ
- 1 teaspoon dry mustard ⓘ
- salt and pepper ⓘ
- 1/4 cup flour ⓘ
- 1/4 cup butter, softened ⓘ
Instructions
- In a large saucepan, heat the oil and garlic.
- Add the ground beef and brown.
- Add mushrooms, beef stock, and Guinness, and bring to a boil.
- Add remaining ingredients and return to a boil.
- Reduce heat and simmer for 1/2 hour, or until liquid has reduced by 1/4.
- Serve with potato dumplings or mashed potatoes.
