Ingredients

  • 3 eggs or Egg Beaters
  • 2 c. buttermilk
  • 1/4 c. butter or substitute
  • 1 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 Tbsp. sugar

Instructions

  1. Beat eggs or Egg Beaters in a mixing bowl.
  2. Add buttermilk and melted butter, then stir to combine.
  3. Sift together flour, soda, baking powder, salt, and sugar in a separate bowl.
  4. Gradually add dry ingredients to the milk mixture, mixing only until blended.
  5. Heat a greased griddle over medium-high heat.
  6. Pour batter onto the hot griddle to form hotcakes.
  7. Cook until bubbles form on the surface and edges look set, then flip and cook until golden brown.
