Ingredients

  • 1 lb. curly noodles
  • 1 large cucumber
  • 1 large onion
  • 2 tsp. mustard
  • 1 tsp. salt
  • 1 1/2 cups vinegar
  • 1 1/2 cups sugar

Instructions

  1. Cook the curly noodles until al dente and drain.
  2. In a blender, puree the cucumber, onion, mustard, salt, vinegar, and sugar until smooth.
  3. Pour the cucumber mixture over the cooked noodles and toss to combine.
  4. Refrigerate overnight so the juices can soak into the noodles before serving.
