Ingredients

  • 1 Tbsp. olive oil
  • 1 cup onion, diced
  • 1/2 cup carrot, chopped
  • 2 cloves garlic, minced
  • 1 large tomato, chopped
  • 2 bottles (8 oz.) clam juice
  • 1 can (14 oz.) chicken broth
  • 1 lb. sea bass fillets
  • basil
  • thyme

Instructions

  1. In olive oil, sauté onion, carrot, and garlic until tender.
  2. Add chopped tomato and sauté briefly.
  3. Stir in clam juice and chicken broth; bring to a simmer.
  4. Add sea bass fillets, basil, thyme, and other seasonings as desired.
  5. Simmer until fish is cooked through.
  6. Float lemon slices on top of each serving.
