Ingredients
- 2 lb. fish fillets (flounder, pollock, or haddock) ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. pepper ⓘ
- 10 oz. frozen chopped spinach, thawed and well drained ⓘ
- 2 c. Bisquick baking mix ⓘ
- 1 c. milk
- 1/2 tsp. onion powder ⓘ
- 10 3/4 oz. can condensed cream of shrimp or Cheddar cheese soup ⓘ
- 1/3 c. grated Parmesan cheese ⓘ
Instructions
- Heat oven to 350°F (175°C).
- Arrange fish fillets in a greased 13 x 9 x 2-inch baking dish.
- Sprinkle fillets with salt, onion powder, and pepper.
- Spoon condensed soup over the fillets and top with well-drained chopped spinach.
- In a bowl, beat the Bisquick, milk, and grated Parmesan cheese with a wire whisk or hand beater until almost smooth.
- Pour the batter over the spinach and fish in the baking dish.
- Bake uncovered for about 40 minutes, or until the top is golden brown.
- Let stand for 10 minutes before serving.
