Ingredients

  • 2 lb. fish fillets (flounder, pollock, or haddock)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 10 oz. frozen chopped spinach, thawed and well drained
  • 2 c. Bisquick baking mix
  • 1 c. milk
  • 1/2 tsp. onion powder
  • 10 3/4 oz. can condensed cream of shrimp or Cheddar cheese soup
  • 1/3 c. grated Parmesan cheese

Instructions

  1. Heat oven to 350°F (175°C).
  2. Arrange fish fillets in a greased 13 x 9 x 2-inch baking dish.
  3. Sprinkle fillets with salt, onion powder, and pepper.
  4. Spoon condensed soup over the fillets and top with well-drained chopped spinach.
  5. In a bowl, beat the Bisquick, milk, and grated Parmesan cheese with a wire whisk or hand beater until almost smooth.
  6. Pour the batter over the spinach and fish in the baking dish.
  7. Bake uncovered for about 40 minutes, or until the top is golden brown.
  8. Let stand for 10 minutes before serving.
