Seafood Gazpacho

Ingredients

  • 1 cucumber
  • 1 green bell pepper
  • 1 lb. tomatoes
  • 2 scallions
  • 1 lemon
  • 2 c. tomato juice
  • 1/4 c. olive oil
  • 2 Tbsp. chopped fresh dill
  • salt and pepper
  • 1 (6 1/2 oz.) can minced clams, drained
  • 1/2 lb. cooked medium shrimp

Instructions

  1. Peel and seed cucumber; cut into chunks.
  2. Stem and seed pepper.
  3. Quarter and seed tomatoes.
  4. Whirl vegetables and scallions in a food processor until finely chopped; transfer to a large bowl.
  5. Squeeze 1 tablespoon juice from the lemon and stir in with the tomato juice, oil, dill, 1 1/4 teaspoons salt and 1/4 teaspoon pepper.
  6. Add clams.
  7. Slice shrimp in half lengthwise and add.
  8. Chill.
  9. Taste and add salt and pepper, if needed.
