Ingredients

  • 6 oz. can crab meat
  • 14 1/2 oz. can diced tomato
  • 1 can smoked oysters
  • 1 Tbsp. corn oil
  • 1/2 c. chopped green onion with tops
  • 4 c. cooked yellow saffron rice
  • 1/2 c. chopped onion
  • 1 lb. fresh or frozen peeled shrimp
  • 2 c. frozen green peas, defrosted
  • 1/2 oz. jar chopped pimiento with juice
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 3 large bay leaves

Instructions

  1. Saute chopped onions in corn oil until translucent.
  2. Combine all ingredients including cooked saffron rice, seafood, vegetables, and seasonings in a stovetop pan.
  3. Simmer uncovered for 20 to 25 minutes until seafood is cooked through.
  4. Remove bay leaves before serving.
