- 1/4 cup fresh bread crumbs ⓘ
- 1 egg white ⓘ
- 3 tablespoons butter ⓘ
- 2 cups fresh mushrooms, sliced ⓘ
- 1/2 cup green onion, chopped ⓘ
- 1/2 teaspoon salt ⓘ
- 1 pound raw shrimp, unpeeled ⓘ
- 1 1/2 cups milk ⓘ
- 2 teaspoons lemon rind, grated ⓘ
Instructions
- In a saucepan, bring 1 1/2 cups salted water to a boil. Stir in the rice, cover, and simmer over low heat for 15 to 20 minutes or until tender and water is absorbed. Remove from heat, stir in the egg white and 1 tablespoon of the parsley. Press the mixture into the bottom of a greased 8-inch square baking dish or other shallow heatproof casserole, then set aside.
- Meanwhile, in a nonstick skillet, melt 1 tablespoon of butter over medium-high heat. Cook garlic, mushrooms, and celery, stirring for about 5 minutes or until vegetables start to brown. Stir in onions, dill, and 1/3 teaspoon each of salt and pepper; cook over high heat for about 2 minutes or until lightly browned. Transfer to a large bowl.
- Wipe out the skillet. Pour in 2 cups of water and bring to a simmer. Cook the shrimp for about 1 minute or until pink. Reserve 1 cup of the cooking liquid; rinse the shrimp under cold running water, shell, and devein them. Arrange the shrimp over the rice in the baking dish.
- Add the cooked vegetables to the bowl with shrimp, then combine all ingredients. Pour the mixture over the rice in the baking dish.
- Sprinkle the grated Gruyère cheese, bread crumbs, grated lemon rind, and chopped green onion evenly over the top.
- Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes or until the top is golden and bubbly. Serve hot.
Tips & Substitutions
For a flavor boost, consider adding a splash of white wine to the vegetable mixture while sautéing. If Gruyère cheese isn't available, you can substitute with Swiss or a sharp cheddar. To make it lighter, swap the butter for olive oil and use brown rice instead of long grain. Fresh herbs like thyme or tarragon can also elevate the dish.
Serving Suggestions
Serve this shrimp dinner with a fresh green salad dressed with a Strong Vinaigrette to complement the flavors. It also pairs beautifully with crusty bread or a light pasta dish, such as Pasta With Asparagus And Salmon. For a refreshing touch, consider a side of steamed asparagus or green beans.
