Ingredients

  • 1/4 cup lemon juice
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 pound scallops
  • 1/2 pound large raw shrimp, peeled and deveined
  • 1/4 cup margarine
  • 8 ounces fresh mushrooms, sliced
  • 1 cup thinly sliced carrots
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon thyme leaves
  • 4 ounces fresh pea pods
  • 1/4 cup sliced green onions

Instructions

  1. Combine lemon juice, cornstarch, and salt; mix well.
  2. Add scallops and shrimp to the mixture and marinate in the refrigerator for 30 minutes.
  3. In a skillet, melt margarine over medium heat.
  4. Add sliced mushrooms, carrots, garlic, and thyme; sauté until vegetables are tender.
  5. Stir in pea pods and cook for another 2-3 minutes.
  6. Add the marinated seafood to the skillet and cook until seafood is opaque and cooked through.
  7. Optionally, add dry sherry for extra flavor and cook for another minute.
  8. Serve hot, garnished with sliced green onions.
