Ingredients

  • 3 lb veal (from shoulder)
  • 12 eggs
  • 1/2 cup farina
  • marjoram
  • pinch of allspice
  • chives, chopped
  • 1 bunch green onions
  • 4 large cloves garlic
  • 1/2 lb soda crackers
  • salt
  • pepper

Instructions

  1. Boil pork shoulder in salted water until tender.
  2. After 45 minutes, start boiling veal shoulder in salted water.
  3. Let the meats cool, then remove bones and chop into pieces.
  4. Add marjoram, allspice, chopped chives, chopped green onions, minced garlic, crushed soda crackers, salt, and pepper to the chopped meat.
  5. Mix in 1/2 cup of meat stock to combine ingredients.
  6. Add beaten egg yolks and whites separately to the mixture and combine well.
  7. Grease a 9 x 13-inch baking pan with cold lard.
  8. Transfer the meat mixture into the prepared pan.
  9. Bake at 350°F (175°C) for 1½ hours until golden brown.
