Ingredients

  • 1 c. sugar
  • 3/4 c. tarragon vinegar
  • 1 tsp. salt
  • 1/2 c. salad oil
  • 1 can French-style green beans
  • 1 can petite English peas
  • 1 can diced pimento (4 oz.)
  • 1 stalk celery
  • 1/2 c. green pepper
  • 1 medium onion

Instructions

  1. Drain the French-style green beans, petite English peas, and diced pimento.
  2. Combine the drained vegetables with sliced celery, diced green pepper, and sliced onion in a large bowl.
  3. In a saucepan, heat the sugar, tarragon vinegar, salt, and salad oil until the sugar dissolves and mixture is heated through.
  4. Allow the dressing to cool completely.
  5. Pour the cooled dressing over the vegetable mixture and toss to coat evenly.
  6. Store the salad in the refrigerator and serve chilled. It will keep for several weeks.
