Ingredients

  • 1 1/4 cups sifted unbleached flour
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 2 tablespoons vegetable shortening
  • 2 tablespoons cold unsalted margarine
  • 1/2 cup shredded sharp Cheddar cheese
  • 2/3 cup skim milk
  • 1 large egg white

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Grease a large baking sheet.
  3. In a large bowl, stir together the sifted unbleached flour, cornmeal, and baking powder.
  4. Add the vegetable shortening and cold unsalted margarine, then blend with your fingers until the mixture resembles coarse meal.
  5. Mix in the shredded sharp Cheddar cheese.
  6. Stir in the skim milk and egg white until just combined.
  7. Sprinkle the sesame seeds over the dough and fold in gently.
  8. Turn the dough onto a lightly floured surface and knead briefly.
  9. Pat the dough into a 1-inch thick circle and cut into wedges or rounds.
  10. Place the scones onto the prepared baking sheet and bake for 12-15 minutes until golden brown.
