Ingredients

  • 3 cups vanilla wafer crumbs
  • 1 stick melted margarine
  • 5 to 6 sliced bananas
  • 2 cans Eagle Brand milk
  • 1/2 cup lemon juice
  • 1 large can drained, crushed pineapple
  • 1 large container Cool Whip
  • 1 can coconut
  • 1 cup pecan pieces

Instructions

  1. Use a 9 x 13-inch dish for assembling the layers.
  2. Layer the vanilla wafer crumbs at the bottom of the dish.
  3. Pour melted margarine over the wafer crumbs and press to form an even crust.
  4. Slice bananas and arrange a layer over the crust.
  5. Mix Eagle Brand milk with lemon juice until slightly thickened and spread over the bananas.
  6. Add a layer of drained, crushed pineapple on top of the lemon mixture.
  7. Spread a generous layer of Cool Whip over the pineapple.
  8. Sprinkle coconut evenly over the Cool Whip.
  9. Top with pecan pieces for crunch.
  10. Repeat layers if desired, then chill before serving.
