Seven Vegetable Medley

A creamy vegetable medley combining tender frozen vegetables, mushroom soup, Swiss cheese, and pimentos, baked to perfection. Perfect as a comforting side dish for family meals.

Ingredients

  • 1 lb. frozen vegetables, thawed and drained
  • 1 can mushroom soup
  • 1 cup grated Swiss cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon black pepper
  • 1 jar pimento
  • 2 cans onions

Instructions

  1. Combine all ingredients except half of the Swiss cheese and half of the onions in a bowl.
  2. Pour the mixture into a casserole dish.
  3. Bake uncovered for 30 minutes at 350°F.
  4. Remove from oven, sprinkle remaining Swiss cheese and onions on top.
  5. Bake for an additional 5 minutes until cheese is melted and golden.
