Ingredients

  • 1 cup quick cooking grits
  • 4 tablespoons butter or oleo
  • 1/2 teaspoon salt
  • 1 1/2 cups water
  • 1 teaspoon sugar
  • 2 well beaten eggs
  • 1 1/2 cups milk
  • 3/4 cup grated Cheddar cheese

Instructions

  1. Bring 1 1/2 cups water to a boil.
  2. Add quick cooking grits, 4 tablespoons butter, salt, and sugar to the boiling water.
  3. Cook until the liquid has been absorbed and the grits are tender, stirring frequently.
  4. Stir in the well-beaten eggs, milk, and grated Cheddar cheese.
  5. Pour the mixture into a well-greased 2-quart casserole dish.
  6. Top with additional cheese and butter.
  7. Bake at 350°F for about 30 minutes until hot and bubbly.
