Ingredients

  • 1 or more eggplants (about 2 lb.)
  • 4 medium fresh tomatoes
  • 3 Tbsp. coriander
  • 2 tsp. ground cumin
  • 1 tsp. turmeric
  • 1/4 tsp. ground red pepper
  • 1/2 cup Crisco
  • 1 tsp. chopped garlic
  • 1 Tbsp. fresh ginger root
  • 1/2 cup chopped onions
  • 1 tsp. garam masala, ground
  • salt

Instructions

  1. Preheat oven to 450°F.
  2. Wash and dry the eggplants.
  3. Slash gashes in the eggplants and bake for 1 hour in the oven.
  4. Discard the skin and smash the pulp in a bowl.
  5. Combine the eggplant pulp, chopped tomatoes, coriander, cumin, turmeric, and red pepper in a bowl and stir until blended.
  6. In a skillet, heat the Crisco until hot.
  7. Add the chopped garlic and stir for 15 seconds.
  8. Add the ginger and stir for 15 seconds.
  9. Add the chopped onions and stir until soft.
  10. Add the eggplant mixture and stir until most of the liquid is gone and the mixture is thick and pulls away from the side of the pan.
  11. Add the ground garam masala.
  12. Serve on a heated platter or transfer to a heated bowl.
  13. Top with fresh coriander and a squeeze of lemon juice.
