Ingredients

  • 3 (10 oz.) packages chopped broccoli (frozen)
  • 2 cups shredded Cheddar cheese
  • 2 eggs
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 cup Ritz crackers
  • 1 tablespoon mayonnaise
  • 1 large jar sliced mushrooms
  • 1/2 cup melted butter
  • salt and pepper to taste

Instructions

  1. Cook the broccoli according to package instructions and drain water.
  2. Mix together the shredded cheddar cheese, beaten eggs, cream of mushroom soup, mayonnaise, and sliced mushrooms.
  3. Pour the cheese mixture over the cooked broccoli and stir well.
  4. Cover with crushed Ritz crackers and drizzle melted butter on top.
  5. Bake for 30 minutes until bubbly and golden.
