Ingredients

  • 1 cup oil
  • 2 large eggs
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup nuts
  • 2 cups flour
  • 2 medium apples

Instructions

  1. Mix together eggs and oil; beat until foamy.
  2. Add sugar, salt, soda, cinnamon, and vanilla; mix well.
  3. Add nuts and mix again.
  4. Add flour and mix until incorporated.
  5. Gently fold in the sliced apples.
  6. Pour batter into a greased or parchment-lined baking pan.
  7. Bake in a preheated 350°F (175°C) oven for about 50 minutes.
  8. Start checking the cake at 50 minutes and cover with foil if necessary to prevent over-browning; continue baking for up to 10 more minutes if needed.
