Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 2 cups whipped cream
  • 6 oz. semi-sweet chocolate chips
  • 2 eggs
  • 1 teaspoon vanilla
  • 22 caramels
  • 2 tablespoons butter
  • chocolate pie crust

Instructions

  1. Sprinkle unflavored gelatin over cold water in a small pan and let stand for 1 minute.
  2. Stir over low heat until gelatin is dissolved.
  3. Stir in 1 cup of whipped cream and bring to a boil.
  4. Pour the mixture into a blender.
  5. Add semi-sweet chocolate chips and process until the chocolate melts and mixture is smooth.
  6. Add 1/2 cup of whipped cream, eggs, and vanilla to the blender.
  7. Continue blending until well combined.
  8. Pour the mixture into a bowl and chill until thick, about 30 minutes.
