Ingredients

  • 1 tsp. oregano
  • 2 garlic cloves
  • 1/2 tsp. salt
  • 2 c. cauliflower
  • 2 c. broccoli florets
  • 2 carrots, cut into short, thin strips
  • 1/2 c. olive oil
  • 1/2 c. white vinegar
  • 1 can red kidney beans, drained
  • 8 oz. shredded Mozzarella cheese

Instructions

  1. Blend all ingredients together in a blender until smooth.
  2. Chill the mixture for about 3 hours before serving.
