Ingredients

  • 4 medium sweet potatoes, shredded
  • 2 cups sugar
  • 1/4 cup syrup (light Karo)
  • 2 sticks margarine, melted
  • 4 eggs
  • 2 cups milk
  • 1 cup coconut
  • 3/4 cup raisins
  • 1 cup chopped dates
  • chopped pecans
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon allspice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded sweet potatoes, sugar, syrup, melted margarine, eggs, milk, coconut, raisins, chopped dates, chopped pecans, cinnamon, and allspice.
  3. Mix well until all ingredients are evenly incorporated.
  4. Pour the mixture into a greased baking dish.
  5. Bake in the preheated oven for approximately 60 minutes, or until set and golden on top.
  6. Allow to cool slightly before serving.
