Ingredients

  • 2 sheets Reynolds Wrap Aluminum Foil (12 x 8 inches each)
  • 0.5 lb. medium raw peeled and deveined shrimp
  • 1 cup instant rice
  • 1 teaspoon seafood seasoning
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 2 tablespoons butter, cut into pieces
  • 8 ice cubes

Instructions

  1. Preheat oven to 450 degrees Fahrenheit or prepare grill to medium-high heat.
  2. Spray foil sheets with nonstick spray.
  3. Center half of the shrimp on each sheet of Reynolds Wrap Aluminum Foil.
  4. Arrange rice around the shrimp, sprinkle with remaining garlic, and top with butter pieces.
  5. Place ice cubes on top of each packet.
  6. Bring up the sides of the foil to create a sealed pouch.
  7. Double fold the top and one end of each foil packet.
  8. Through the open end, pour in water to create steam inside the packet.
  9. Double fold the remaining end to fully seal the packet, leaving space inside for heat circulation.
  10. Repeat the process to make two foil packets.

Tips & Substitutions

For a flavor boost, consider adding a splash of lemon juice or a dash of hot sauce before sealing the packets. If you don't have seafood seasoning, a mix of paprika, salt, and pepper works well. Feel free to swap out broccoli for other vegetables like bell peppers or snap peas, which also cook well in these foil packets.

Serving Suggestions

Serve the shrimp and broccoli packets directly in the foil for a fun presentation. Pair with a fresh salad or crusty bread to soak up any delicious juices. For a complete meal, consider serving with a side of pineapple rice for a tropical twist, reminiscent of dishes like Pineapple Shrimp Maui.

Storage & Reheating

Leftover shrimp and broccoli packets can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place the packets in a preheated oven at 350°F for about 15-20 minutes or until heated through. Alternatively, you can microwave them on a microwave-safe plate covered with a damp paper towel for 3-4 minutes.
